NEAPOLITAN RADICCHIO PEPERONATA WITH ORANGE LEMON AND STALE BREAD
Since i just came back from a weekend in the Pizza capital i got inspired, but not with pizza. I was mesmerized by all those colours of vegetables that were everywhere. And in Naples you don’t waste any piece of stale bread. So they cut it in cubes roast it golden and in it goes. With seafood with veg. So did i! The surprise in it is the roasted pieces or orange with skin, giving sweetness and bitter hints.
SERVES 4
1 large red paprika or 2 smaller
1 organic orange
1 clove or garlic
olive oil of the best quality
rosemary sprigs
stracciatella or burrata
1 head of radicchio
zest of one organic lemon
roasted sourdough in pieces or cubes
1 Roast the paprika until soft and charred, then peel.
2 Slice the orange and cut in pieces (yes wholly!)
3 Chop the garlic finely
4 Heat some of the oil and add the orange pieces, brown both sides.
5 Tear the leaves of the radicchio and add to the orange and stir until just wilted. Add the garlic, rosemary and stir fry another 5 min.
6 If you like add pieces of roasted bread and toss.
7 Spread out the stracciatella on a plate, and divide the veggies over it or next to it. Drizzle with more olive oil and sprinkle with coarse salt. Grate some lemon zest over it.
